I'd bet a handful of Lemon Drops would be a nice variation.

I've made pickles with lemon drops before, the pickles were pretty good.

I actually made a whole jar of pickled lemon drop drops, about 4 years ago. They were pretty good. I still prefer pickling thicker fleshed peppers, if I'm going to make an all pepper jar of pickles, though.
