Tonight I decided to give pickled eggs a try. A small batch to experiment with.
I hard boiled 5 eggs and removed the shells.
When I put the eggs on I prepared the brine:
1/2 cup white vinegar
1/4 cup water
1 tsp pickling salt
1 tsp sugar
Spices: bay leaves, cloves, all spice, peppercorns, mustard seed
I brought it to a light simmer and let it go until the eggs were ready.
In a 500 ml jar I added my eggs plus two halves of a red habanero (de-seeded) I had in the freezer. The spices in my brine settled so I spooned them into the jar before topping it up, 1/4 or so of head space. I then applied the lid. I'll leave it in the fridge for a week before trying one, it might need two weeks though.
I took this picture and it looks like a goofy muppet / puppet face staring at me!
There's eyes with pupils, a nose with nostrils even! LOL!
