Thick soft purple stems?

I've got about 70ish peppers growing this year counting OW's and maybe another 50 at my partners place. The plants are overall healthy BUT they don't look as good as last year and Im not sure why , my thought is too much nutes and perhaps too much care lol. Even though they are outside they still have the purple stems like they do under the light and the stems are THICK and very soft, the color of the leaves is more akin to a lime green rather than a lush green and many are yellowing a bit at the bottom. They are growing but just not as beautiful as they were last year. I have been struggling with aphids but seem to have a leg up on them now. Maybe Im being too picky but everyone has this big ol thick soft steam and the plant is lanky and not as filled in. Ya think this is a result of too much nutes?

I know.  We have had 15in in July already here in East TN.  My in-laws are in Seattle and say it beautiful and sunny right now.
