Nice review Brian! very descriptive as Lucky said! I think you may have hit it right on the money, sounds a touch to sweet to me as well. Maybe it would make a good PB&J sand which??? haha
 
I think it was hotter to me because of the fact that it was still warm when I tasted it. lol I never tried it cold, or even room temp.
Sorry about the little containers, but I didnt want to buy a bunch of bottles yet. If people get a little more interested, I will plant a bunch of one particular kind of pepper next year, and will buy some bottles.
GREAT review though! That was exactly what I wanted, an HONEST review. Really good description! I will tone down the brown sugar a little. I am just SOOO against sauces with a bunch of vinegar taste. Kinda funny...as I type this, you talk about the vinegar. lol I just think that 99.9% of sauces out there have too strong of a vinegar taste, it kinda takes away from what it COULD taste like. I think I was a little too concerned about the vinegar and must have gotten carried away on the sweetness. I will probably calm down the sugar and maybe add some honey.

Let me tell you this, if you dial down the sugar content on this sauce, you will have a SCORCHER. I was correct in that the sugar made too much of a buffer in the mouth. I woke up this morning and used the facilities like I normally do (you can see where this is going right?), and I had the WORST ring sting I've had in a LONG time. It was absolutely horrific. So yeah, while the suger buffered my mouth, most of the capsaicin made it's way into my digestive tract and once the sugar was processed by my body that left all that lovely capsaicin to make it's way to the exit and burn the crap out of my backside. If you can find a way to make that burn happen in the mouth then you will have a real winner.
 
Pooper - I think the goal of any vinegar-based sauce is to tone down the vinegar as much as possible - but as a suggestion there are other ways to do that besides sugar. If you reduce the brown sugar and add honey you're still likely to be too sweet.

I'd suggest just scaling back the brown sugar and trying it out. Make "micro-batches" by reducing your recipe and experiment a bit. Start with 1/2 the sugar and increase from there.

Personally I'm not a huge fan of brown sugar as it's got a very intensely sweet and distinct flavor, but each to their own. But another suggestion would be to both reduce the brown sugar & then sub in cane sugar for part of what's left. Might take the edge off.

Good suggestions, Lucky. I'll try that out on the next batch. I got this round of Brain Strains from Cappy himself, and I believe I MIGHT be able to get more from him. If so, I'll see if I can't find some cane sugar.
I feel ya, Comp. I used to eat all of the hottest crap. But what it does to my stomach and ass just isn't worth it!
