Using beer to make a wing/hotsauce

Most of the sauces that I make all have liquor in it. I pretty much know what I use when for certain sauces i.e. tequilas for southwestern/ mexican based, rums for tropical based, and fruit liquors for other fruit sauces.

What types of beer are good for making hot sauces?

In general dark beers can get a little bitter when cooked down.

The fruit beers, like Lindemans, will add their flavors.

Unless you have a recipe that calls for something specific I tend to go with a middle ground amber style lager. Or an IPA can really add that hoppy bite. Hefeweizens seem to do good with cooking, really good in cheese dips.

The same rule of wines applies for beer. If you wouldn't drink it don't cook with it.
