seeds-germination viable seeds

just curious , has any of you picked pods a little early and still had viable seeds . will the seeds continue to ripen if pods are picked ant sit for a few days ? want to start picking my bhutlahs . but want all the seeds . can't quite tell if their truly ripe being deep down in the plants .     
 
With my Morugas for example, if I see any green still, I wait till it turns solid red but if not totally ripe, I don't think it would make a major difference.
I could be wrong.
 
If it's just a little early the seeds should be viable. I always try to pick the best looking (or biggest ) peppers for my seeds.
 
The wait, although painful as it is, is worth it in the end. You cant unpick a pepper if you guessed wrong.
