       and there is no way i want a onion staring at me on my plate!       but whatever i ate some of the best fresh bird ever this morning!!!!!      nothing beats   FRESH     bird    and the ribs   oh my      killed wednesday poor little pig but oh so fine !     but yall cant get with it?      its a shame when a man kills some of his birds and trades a bunch of crop for some pig just for a t.d.  then cant even enter

i only shot him because he jumped on my wifes back!
 
Yeah...I got in a hurry slicing, and sliced the big end one way, instead of separating them...fortunately it was tender enough it didn't matter much.  But bark...really?  Did you NOT see the meat-on-the-bun pic...that black piece?  lol  Regardless, it was a new technique, and I like it!

The brisket looked weird to me, no bark, and possibly sliced with the grain (hard to tell). I think that last 4 hours, smoking covered in a marinade pan with apple juice, was more of a braise than a smoke, and that softened the bark. That's also the reason it has that faded color, from steaming in that covered pan.
