LOL - I assume you know that this traditional style is considered to be a "top knot" in France - like a woman tying long hair into a bun on the top of her head. But not just that, no. Even the bottom layer seems a bit thick, again, for my personal preference. However, he did also state it was the first time he made brioche, and I can fully appreciate the experimental nature of such an undertaking - you don't really know how much bread is going to expand the first time you make a variety that is new to you.
