LOL - I assume you know that this traditional style is considered to be a "top knot" in France - like a woman tying long hair into a bun on the top of her head. But not just that, no. Even the bottom layer seems a bit thick, again, for my personal preference. However, he did also state it was the first time he made brioche, and I can fully appreciate the experimental nature of such an undertaking - you don't really know how much bread is going to expand the first time you make a variety that is new to you. Heck, you saw my experimental sculptures.... you KNOW I appreciate experimentation! :lol:

That aside, I highly recommend you try the coffee syrup on something, even if it's a store-bought slice of banana bread or muffin. Just use a 1:1 ratio of coffee and sugar - easy peasy. Separate is good, but together is special.

That's EXACTLY what I did with the knob/nipple thingey lolz.

You're right about the proofing volume geeme, it almost tripled in size. A hamburger bun shape would suit this better. But that said, there was two eggs in there and the brioche ended up pretty soggy :D

I dunno who to vote for... so hard to decide!

Finally realized that I kept coming back to one entry while looking at all the others and my vote went to DTS. Great looking homemade Brioche man. Crust just the percfect shade of Brown. I'd trade half a sammie with ya. :)
