Frydad's Chilly Weather Chili Waffles
I had another great idea, but every time I think about AJ's Texas Red, I have to make it.
In Miami, the weather PLUMMETED into the mid 70's. Firewood and Marshmallows are off the shelves. Electric blankets and woolen coats have been put on standby.
The waffle throwdown needed a good cold-weather entry.
So I whipped up a batch of AJ's Texas Red, with some minor substitutions. Used jalapenos and poblanos for the heat. Chuck steak, pork cutlets, and italian sausage. Bought 2 minis of pink wine. The rest of the ingredients are legendary on this website. Put it in the pressure cooker for 2 hours, and then on simmer for 2 more (pressure cooker does great for chili, it speed simmers!).
And no damn beans in this pot!!!
Waffle time!!
Made a cornbread waffle batter. Added diced jalapeno and shredded cheese to the mix. Cooked it up on the new waffle iron. Made them artisan style, so don't mind the crumbley edges.
Spoon the chili on the jalapeno-corn-waffle. A piping of sour cream and a bit of shredded for garnish. It was awesome!!!!
