ingredients what do you think of these ingredients?

i got a some habs tonight so i plan on making my second batch of sauce tomorrow..

habs
lime
roasted garlic
onions
small amount of pineapple
red wine vinegar
salt
rum

pineapple-rum hot sauce

what do you think? any suggestions? any comments?

I say the ingredient list looks great, though I'd take white wine over red wine. but you said thats what you have at the moment. & red wine vinegar is still a great vinegar IMO

I agree, this is just my preference so you can do whatever you like, but use more lime (maybe throw in some lemon too?) to get that acidity rather than using lots of vinegar.

ever since I was 4 yrs old, I've kind of hated vinegar (It's a long story)
