ANYWAY! Now that we all know about HPLC, I couldn't believe how many people came up to me at the fiery foods show and asked "What's Capsaicin?"


A couple other companies to check out is Puckerbutt Pepper Company and Henry Family Farms.

Puckerbutt is owned by Ed Currie of the Carlina Reaper chile fame. They have some sauces and also straight chile purees.

Henry Family Farms have 3 sauces that they call "pepper extracts" but they are actually chile purees. I saw them on EatMoreHeat, which is the only way I know it's not extracts.

There are a lot more companies that have some HOT sauces, Zane & Zacks, Crazy Good, Flaming Joes, High River Sauces, Heartbreaking Dawns, Danny Cash, JAC's Tailgaters, TAT's, PatterFam, Wicked Cactus...

One way to find new or other companies is to go to the Fiery Foods Show and the ZestFest websites and click on the List of Vendors. Most have links to the vendor websites.
 
LDHS with butter and some bhut puree is a wonderful wing sauce. Just sayin'

Also regarding Puckerbutt, seconded - I recently did a trade with them and got a bottle of their "I Dare You Stupit" sauce. It's a Carolina Reaper puree sauce in a rice wine vinegar.

My god. I did a brief write up for this sauce in a G+ group I'm in, which I'll share here:

"1st reaction "Holy crap that's hot!!!"

For a non-extract, this might be the hottest sauce I've ever had. Solid 20+ min burn on my lips/mouth from 2 drops. I'll drip it on food, but this is not a pouring sauce for me.

Not an unpleasant taste at all - snappy rice wine vinegar, some hints from the fruit/vegetables (+Brian Meagher would cringe at the ingredients list of "peppers, fruits, vegetables spices, vinegar" - lol) - but man....if anyone here is looking for a true "superhot" caliber sauce that's not laden with metallic extract flavor, give it a try. You'll be pleasantly cooked!

I think it'll be great for things like "pot of chili" or any other bulk food item I want to heat up."

Seriously one of the hottest non-extract sauces I've ever tasted. This product is no joke - way too hot for the likes of me, but I did try a few drops in a bowl of chili and it was spectacular.

Ps - the only reason I said Brian would cringe is that he (like me) likes seeing ingredients listed. Generic things like "spices" and "peppers" are less than satisfying to the sauce consumer who wants to know what's in it. Purely a pet peeve and nothing to detract from this sauce.
 
Awesome discussion. Learning things I never knew lol. So I'm guessing there isn't really a sauce out there hotter than Blairs ultra death. I know I could ad extract to anything to heat it up, but I'm not wanting to do that. I'm simply looking for the hottest sauce premade.
 
Incinerator from Heatseekers Chilli in Australia is made with 7 Pots and Morugas, pineapple, ginger, couple other things and is really really hot. JayT did a review of it. The latest stuff is hotter than what JayT had. Candice is in Australia, but there are a few available in the US if you contact her directly.

Incinerator is really good. Stephen G, there are tons of sauce hotter than Blair's Ultra Death, the question is how much flavor do you want to go along with your extract. I actually happen to like one superhot extract sauce, Mad Dog 357. It has molasses in it which masks the extract taste a bit. I bought a bottle of Blair Ultra Death, tasted it and gave it away. Tastes awful to me.
 
I have had Maddog's 357... too rich for my blood. I ended up giving it to a guy so that he could play a prank on his son... [for all of you 'precious snowflake' types, not to worry, his son is 18] -- I love heat, but if it overpowers everything, and leaves my tastebuds numb, what is the point? I could have put an ember in my mouth for the same effect. I love sauces that bring some heat, but also enhance flavor. That is why I named the ones that I did... I managed to exclude Heart Breaking Dawns... They make some excellent sauces as well.
 
I made wings with that 357. Not straight, but mixed in. It is good. Also good to heat up a bowl of chili
