What to do with them??

Hi all.
I have been reading that its best to pick the pods as soon as they are red to encourage more fruit. I have about 6 that are red and the rest are still green.
If I pick them off whats the best way to keep them until I have enough picked to make some hot sauce?
Do I freeze them?, stick them in the fridge?? I'm assuming that the rest aren't too far away from turning.

If you freeze them they'll be soggy when thawed out again {no problem if you're making sauce} If you want to keep them crisp put them in a brown paper bag & on the top shelf of the fridge.
 
They will last a month or more, just check them every day or so & remove any that are browning. Several months if you're freezing.
