Whcih bottle should I open next?

thats alot of sauces you have there, & congrats for that. I just have 1 question how do you use all of them before they get old & you need to throw them out ?
granted I darn near eat every meal with hot sauce or crushed chiles added to the meal, but I could never go through that many bottles of hot sauce before they expired.

so in short be a man & dump them all out into a bowl & do shots of hot sauce

Well, with your last statement, you basically summed it up. I've got about 60 plus hot sauces right now an in two weeks it'll be down to 30 sauces due to consumption. I eat alot of sauces with alot of meals and based on that...sauce goes VERY quickly.
