harvesting When should I harvest the fruit?

some of my peppers are fully red while some on the same plant are still green. should i pick off the red ones and leave the greens ones until the ripen?

Even after they turn the final color, I have found the flavor and heat level will continue to change. For most chinense types I prefer to pick them a couple weeks after they turn color. They taste sweeter to me at that stage. You can get a lot of different flavors from one plant and it looks like you are gonna have plenty of pods to experiment with. :dance:
 
I only harvest ripe pods. I discovered several years ago to leave jalapenos and serranos on the plant until fully red and WOW what a difference in taste. It is all personal preference but I would highly recommend waiting. Something cool you will notice is when you start harvesting pods, the plant will go into production overdrive! Wait and see.

they are yours do not be "afraid" of trying them
when green yellow or red they may have a 'character' you like
even before they appear "ripe"
if you do not experiment how will you figure it out?

are peppers ready to eat off the plant or should i let them cure for a bit. i also used some fertilizer like yesterday. should i wait to give it water before i pick? would the chemicals give the pepper a different taste?
 
if you can help it, pick only when ripe. i have to pick mine sometimes when they're partially ripe or starting to ripen to keep the maggots away. them fruit flies love to lay their eggs in my peppers.

ive definately noticed flies hanging around my pots. didn't think much of this but now that you mention it, im worried. do they lay eggs on the pepper or inside it (i dont know how they would pull this off).
?
anyways, i guess ill be picking them as they turn red. should i keep them in the refrigerator, while the other ripen?
 
i was cooking churrasco today (skirt steak) and i decided to grab one of the pepper and just cut it up in slices and served it with the steak. pretty nice kick to them. let my friend try a small piece and his face turned red for 10 minutes. pretty funny.

good job now you need to try some green also
it might be better to try to warn the friends off
rather than try to sucker them in?
