When to pick?

redthumb - IMO cayennes taste alright when ripe but green I could just imagine the taste, no thanks.
theres only certain chiles that are tasty in the green stage(unripe)

Your choice. I'm from the midwest, which means a short growing season. I pick my peppers when they are hot. Long before they have a chance to change colors.

my jals have taken 6 months to turn red i planted the day after christmas and the pod is just turning red now if your planting in a short season plant early if you want them red

It looks like I got one by accident since my Bhut order was mixed up. I think it was planted around Christmas and it started getting pods a couple of weeks ago. Should give me plenty of time to get red ones.

It really is true: "Be careful what you wish for" ...

What kind of barbaric heathen eats their peppers unripe when they have a choice??? Do you not realize that your complete disregard for all that is Good and Proper has led the great unwashed masses to believe that green is the natural state of a pepper??? Do you know how many times I have to explain that green bell peppers are unripe, not a color like red, orange, or yellow???

Most peppers don't get going with their sugar production until they start turning to their final color. (whatever that might be) Some peppers are ok to eat while green (taste) but most don't develop a decent taste until they ripen.
