Randomly picked up 4 white eggplant. Never grown or eaten them before. To the right of them are three scotch bonnets and a basil pot. Anyone familiar with white eggplant?

Only bitter eggplants need to be soaked. Many varieties are ready to go when they are picked. And even bitter eggplant are often tasty at picking, if you just pick them a bit earlier...For many years in my early life I hated eggplants because the were bitter, learned they were not cooked properly. Eggplants need to be soaked in salt water and their no longer bitter, Love them ever since.
