Here's one of my favorites! Deer chunks and gravy!
We butcher our own deer and i always cut a bunch of chunks and pack them in smaller packages and label them stew meat.
First i Start browning the meat really good in bacon grease! I ad garlic salt (was out of cloves) onion powder, fennel, rosemary, basil, oregano, pepper and CAN'T FORGET THE HOT STUFF! In this batch i used half of a dried naga morich. (keep in mind this was only one serving.
Then let it brown up really good.
Then i add coarsely chopped pepper and onion and brown some more.
After a bit i throw in about a half cup of water to get all the tasty drippings to unstick from the pan.
Soon as its all unstuck i add a can of beef broth and add chopped potatoes, cover with a lid and simmer till the potatoes and deer is tender.
Once they are i add about two spoons of corn starch in about a half up of water. Stir it up until it looks like milk and i add frozen peas and frozen corn into the pan (was out of corn) slowly stir into the broth until you get a thick gravy.
Once your gravy is thickened dump into a giant bowl! Don't forget the largest spoon you have for all that delicious gravy!
