What is a good crop to grow then till in at spring? I wan a heavy think crop like a grass or something if possible

I met this guy at a local brewery tonight. He overheard me talking about peppers. Started talking about gardening and asked me what I have planted for the winter.
He owns the company and gave me some advice...

I always put in timothy hay as a ground cover as it has plenty of nitrogen when turned over in the spring. Then I lay down my landscape matterial and just plant.
I am trying to build my soil so I will be adding tons of organic matter I think I will grow alfalfa. I will be tilling in a lot including different manure, wormcastings, soils, egg shells, and compost hopefully amending it enough to grow in two years or so
