overwintering Winter crop

What is a good crop to grow then till in at spring? I wan a heavy think crop like a grass or something if possible
 
I met this guy at a local brewery tonight. He overheard me talking about peppers. Started talking about gardening and asked me what I have planted for the winter.
He owns the company and gave me some advice...
I'm just now looking into it and not sure if this is what your looking for...

yes that winter cover one looks like it will be perfect
 
I am trying to build my soil so I will be adding tons of organic matter I think I will grow alfalfa. I will be tilling in a lot including different manure, wormcastings, soils, egg shells, and compost hopefully amending it enough to grow in two years or so
