misc Woozies and Hot Water Baths

I think I learned something tonight. Was trying to bottle some hot sauce and after giving some bottles a hot bath, discovered the lids were not real tight. So I tightened them down.

This seems to be the wrong thing to do. Two of three Woozies blew their cap. Apparently, they need to not be so tight hot air cannot escape, then tightened up afterward.

I think you just skip the hot water bath with woozies. I do at least.

Ya, just hot pack your woozies(sterilized) and skip the water bath.
Oh ya, you should also turn the hot filled woozies upside-down for a while to sterilize the inside of the lids.

If you wash the bottles well and package the sauce hot, storing upside down will sterilize everything and create a seal on the lid. Way quicker that way.

Yep, I have talked to Commercial packers and thats the way they do it
too, seems the plastic caps get soft at higher temps and blow off.
