Im a small batch sauce maker looking to branch out and start some new sauces fermenting. Currently we grow a ton of ghosts, reapers, datils, and yellow 7 pots so Im not too interested in any of those varieties.
I would be super interested in a full pound or two of almost any pepper, from super hots to ajis as long as the quality and freshness are really good. No mixed boxes, I like to do my sauces with just one variety each so I can get a feel for what they turn into. And nothing that is hit with pesticides, they wont ferment very successfully.
