You didn't mention how you dried it out... looks like oven on low heat with the door cracked? I've been making jerky for a few years now. I used to make it in the oven (couldn't justify buying a dehydrator when the oven did the exact same thing...), but I decided to try a new method after...

I'm growing fish this year and mine is all green as well. I've never grown these before, so I guess we'll see what happens when peppers show up. I bought the plant very young from a local nursery, none of the fish pepper plants had the variegated leaves.
