How long does hot oil stay good for? Assuming it used dried chilis.

I love eating spicy foods, but I'm a newbie when it comes to cooking them. Unfortunately the people I usually cook for can't take the heat! I gotta get my brother on here though, he is all about the heat when it comes to cooking.
