      It is impossible to get anhydrous ethanol by distillation since it forms an azeotrope with water. And why would we make an anhydrous solvent if we have some in the lab with similar polarity?   The goal is to purify the capsaicin in the best possible way, just proof of concept in the lab...

      Ethanol would indeed be a good choice to extract capsaicin. Only problem is that we need to register the use of absolute ethanol. Other dry and pure solvents are not registered.   The other steps are more or less the same as we are planning to do.    BTW we are not planning to use the...

    Hexane will probably be not polar enough. From what I have read, dry ethanol, methanol, propranolol or aceton are the best.
