I live in Ontario, Canada where i love the outdoors. I spend a lot of time camping and fishing and i love spicy foods. I have a garden and grow many varieties of hot peppers.

Share a Recipe
6-10 sliced scotch bonnet peppers (jalapenos may be used if scotch bonnet peppers are unavailable)
2 Tbsp. thyme
2 Tbsp. ground allspice
8 Cloves garlic, finely chopped
2 Medium onions, finely chopped
1/2 cup green onions
.5 oz of fresh ginger

2 Tbsp. brown sugar
2 Tbsp. salt
2 Tsp. ground black pepper

1 to 2 Tsp of the following (to taste)
-ground cinnamon
-nutmeg


1/2 cup olive oil
1/2 cup soy sauce
Juice of one lime
1 cup orange juice
1 cup white vinegar

blend all and marinate for at least 24 hours

couple of optional notes:

1) use a charcoal bbq if available...slow charcoal cooking will make a world of difference in taste
2) save half of the marinade when you go to cook the chicken and bring it to a boil on the stove for 5 minutes. Then reduce and add a bottle of your favorite bbq sauce (i usually add a chicken and rib sauce) to the marinade. When the chicken is about 20 minutes from being done, coat all the chicken with the marinade and cook until done.
