Chilli Chicken Penne Pasta
(adapted from someone else's recipe)
Serves 3-4 peeps
3 Anchovies
1-3 orange habs chopped
100g quality kalamatta olives
1 onion diced
500g diced chicken meat
400g tin of diced tomatoes
quantity of penne pasta
Fry chicken in a little olive oil over a medium heat until sealed and golden and set aside.
Add onions and chilli to the pan, and fry until onion is soft. Add olives and anchovies. Fry for another minute or so. Add tomatoes and bring to the boil. Replace chicken back in the pan and simmer for 15 minutes or so while you cook the pasta.
**You could also add some stock or red wine and reduce it a bit before adding the tomatoes for a fuller flavour.**
