I thought you were making a dessert topping with sugar in it. (i should pay better attention). Thats the thing about cocoa, it needs a lot of sweet to balance its bitter. I think you would find more balance using cocoa in a sweet teriyaki style sauce. my 2 bits. cheers, Ryme
