Candied habs cut in strips & dipped halfway in dark chocolate are awesome. Also if you heat the leftover syrup up to hard candy stage you can turn it into suckers and stuff. Syrup seems like it absorbs most of the heat too so those are HOT.

Oh yah - I always save the syrup. Depending on various factors, I'll either leave it as syrup or bring to hard crack stage then spread it out in a pan. Awesome just the way it is!
