I would say bacterial wilt. I had some trying to overwinter and every single plant I had did that and died. I found out recently that mine had bacterial wilt.   I'm a new grower so don't take my word for it. ps no matter what I hope they'll recover nicely.

I have a question:   If I cross two peppers now will I then get the new hybrid instantly or will I get a pepper that looks like the normal one which I then have to grow out the next season for it to become a new hybrid

I think it's sunburn too, had a litle of it myself but nothing to worry about ;)
