smokers Trying the Pit Boss Austin XL - $397 Walmart special?

Backstory: I've been using my $25 used offset stick burner for a few seasons. (https://thehotpepper.com/threads/smoked-pork-butt.65342/page-9) Had a chance to cook some 3-2-1 ribs on my dad's camp chef over the holiday weekend. Some of the best ribs I've done. And I didn't have to manage a...

    smoking Prime Rib

Cooked a prime rib tonight on the offset.  Two bone took about 5 hours to reach 130 by the bones which was a nice medium rare.     I cooked it bone side down, toward the fire.  I trimmed most of the fat off before cooking.

    Let's try to make chili!

I signed up to make mild-ish chili for Friday.  I like to take the maximum time to cook anything.  :)  Please shout out suggestions as I make a mess of the kitchen.     I'm going to start with five meats.  Ribs, previously smoked pork butt, ground lean something, sausage and bacon.    The bacon...

Baby Back Ribs - Round 2 in the Crock Pot

The day started just like any other, with a cup of black coffee and some toast.  For some reason, ribs sounded really good.  Except I had to go to work and didn't have all day to make food.  Isn't that always the case.     Rub: 1/2 cup of light brown sugar, packed, then some 1/4 cup of Himalayan...

    Palms, bananas and other exotics

Nobody in my neighborhood has a palm tree.  That's probably because I live in Indiana, zone 5b.     It all started this year when I found a 'hardy' banana tree at a local greenhouse.  The tag just says "hardy banana" so I'm guessing it is a musa basjoo.  I liked it so much that I scooped up four...

Help ID Problem - Cayenne Pods Shriveling on Plant

Plants look great...     Still good...       Gah! What is wrong with my pods?!     They start off pretty and green.     But it is all downhill from there.     I bought the seeds for all for impacted varieties from Burpee.  I'm not putting any blame on the supplier, I just find it a...

    Baby Back Ribs - Dry

My favorite ribs to date:   Set one rack of baby back ribs out to warm up.   Start one chimney of hardwood charcoal with newspaper, flint and steel (or a match).   Mix dry rub:   ½ cup of light brown sugar, packed, then some ½ cup of Himalayan pink salt (I'd cut this in half next time) 1...

Help improving my setup (heat, light etc)

This year I moved my seed starting setup to our uninsulated porch.  Porch is 13' x 16' cement pad that sits 3' below ground level and is surrounded by windows on 2 sides.  They called it a sun room but it doesn't get very much sun.   Our house is small and we really needed the space inside.  Now...

    Small Type of Cayenne?

Some friends brought us back a bag of these buggers.  I think there are a few dragon cayenne in the mix, but most are small, kidney bean sized pods.  They are jammed with seeds and pack a punch.   Dried pod flavor: Immediately you get a quick hint of cayenne sweet but it quickly lights your...

    NeedsWork 2016 - Year Two

Happy New Year!  It's that time!  This year I am focusing on cayenne and white habs as they are our favorites from last year'.  Ground white hab pepper is like a step up from white pepper.  Very versatile.     Most of my pepper seeds are hitting the dirt ~2 months earlier than last year...
