    BurningGut,   I'd first suspect that you have a severe allergy to some component in the chili.  I doubt that it would be the chile peppers, or the meat, or the tomatoes, or the beans... But, how about FLOUR?  Or some other background ingredient that isn't in most other foods that you consume...
