  Can I Sterilize the same way I do when canning in Mason Jars (Boil)?

  The Dried pods are still cut in half - Exposing the same inner walls. I will experiment here.  

Do I want the Peppers in the oil while it is heating? Do I just need to touch 190 and then its good?

I will do both. I like the look of whole, however I made a bunch of Habanero Pepper Flakes as well :)

  I would probably use Extra Virgin Olive Oil to be a nice finish to some dishes.   Now, should I put the pods in whole (Well sliced in half from the dehumidifier) or as flakes? Should this be cooked or just throw the pepper in the oil?

It is hard for me to test the pH with these strips as it is thick, however if I let it sit on the stick 10 seconds and gently wipe it off on a paper towel and check very quickly after its looking like the color of 3.6

I just ordered the strips on ebay. Can I use the strips to test the sauce that is already canned in my basement when I open it?

Well the growing season is about to wrap up here in Michigan (I am actually surprised how many fresh ripe pods are still coming in). It was an eventful year and first time growing peppers - let alone right from seeds. I got hit with Storms that blew all my plants over, Aphid Infestations, Pepper...
