Storing defrosted peppers for daily consumption

Hey Bookers, Another question. Regarding your post:   "Posted 18 February 2020 - 06:47 PM   "If it's that short of a period I would make a relish type with a little oil garlic and spices and salt... You could use a few sweet peppers, small onion, garlic and a bit of ginger... steam for about 15...

Storing defrosted peppers for daily consumption

I like storing foods in glass containers, but my mason style jars use a hard plastic lid that replaces the regular canning lids (not reusable). Problem is while them seem to fit "okay", I actually found they are not air tight. And I don't want any air getting in my hot sauce which could lead to...

Storing defrosted peppers for daily consumption

I have been defrosting small bags of my frozen peppers, enough to finish in a month or so, if not sooner, and storing them in the fridge in a glass jar, with around 25% vinegar. But now I'm getting tired of the vinegar taste, smell, etc. Any suggestions for alternative fridge storage methods...

Storing defrosted peppers for daily consumption

I added about 1/2 tsp salt, and 1/4 cup a.c. vinegar. Think I'm good for a week or two? In the fridge of course.

Storing defrosted peppers for daily consumption

I purchased fresh, multiple, extremely hot peppers a month ago. Cleaned them and froze them in vacuum bags. Now I want to keep some available for eating everyday. So I defrosted one of the bags (about 1 cup) and diced them up, and put them in a glass mason jar in the refrigerator. I am wondering...

storage To wash, or not to wash before Freezing

Wow, Thanks for the responses! About washing, I was going to put them in a large ziploc with some water and a splash of vinegar, and shake them a bit. Same as I do with veggies. Then dry them. Any comments?

storage To wash, or not to wash before Freezing

I've just purchased several pounds of fresh Morugas and Scotch Bonnets directly from the farmer and want to freeze them to last for at least 6 months. I have vacuum sealer. I eat all but stems, so I thought I don't need to cut them up before freezing. My question is about washing them. Some say...

    storage Storing Dried Peppers

Thanks AndyW!  My only concern with that is when I un-freeze them, won't they rehydrate in the air, and be subject to mold, etc.? I think they are at least 6 months old already. I don't know. Think I'll trash'm to be safe. If I ever buy dried again, they'll go directly into mason jars using...

    storage Storing Dried Peppers

Hi all, I'm fairly new to making sauces, etc. so pardon my ignorance and inexperience. About 6-8 months ago I bought a large amount of dried jolokias, scotch bonnets, red moruga scorpions,....peppers from a farmer in Lancaster county, PA (Amish). I neglected to ask him when they were dried, how...
