    My 2 gallons of fermented Jalapeno's and Carolina Reaper peppers are aged and ready to turn into sauce. I'm researching how much of my home made red wine vinegar and salt to add. Peppers were fermented with a 2% salt only mash. Thanks for any recommendations !
