recipe-help Bitter and no flavor

Those with more experience please help! I fermented a jar of Fresnos and combined with onion, pineapple, bell pepper, ACV, garlic, 1 dried ghost, salt, cumin, citric acid and Xanthan gum. The bell peppers and garlic were roasted in the oven and added with skin on. (Made around 25oz). Amounts of ingredients are roughly that order from most to least.

The finished sauce had a strange lack of flavor at first with a rather slimy texture (probably too much Xanthan) and then hit a funky sweet note and ended bitter. The overall lack of flavor is a bit weird and then the bitter at the end is substantial, does anyone have recommendations on what could have caused the lack of flavor and bitter taste?
