I have some fermented peppers that are done and besides hot sauces, was wondering if I could use these to make a hot jelly ?
Any info would be appreciated.

I don't see any reason why you couldn't. Even if the peppers were still actively fermenting, they'd stop during the boil with the sugar to make the jelly. Best of luck! Let us know how it turns out
