Oven Soup

I would have posted this in my Chronicle thread but those are a bunch of hooligans over there. And I always feel awkward posting in other people's FLOG so here it is. My wife's Cauliflower Soup.
 
1 head Caleeflower
1 whole White Onion diced
3 Cloves garlic minced
2 Carrots or 37 of those pre-peeled mini carrots for Vegans chopped
Pepper Flakes
4 C's Chicken broth (I use 'Better Than Broth®'
1 C Gouda cheese (not smoked) shredded
1 C Sharp Cheddar shredded
Dry Mustard, Salt, BP and White Pepper
 
Coat Cauliflower with EVOO and roast at 400º for about 40 minutes.
Sauté the onion, carrots, pepper flakes and garlic in butter until onion turns translucent.
Dump in roasted cauliflower, seasonings and broth.
Bring to a boil and simmer for 15-20 minutes. Or an hour.
Motor Boat, Immersion blender, food processor or Ninja® the shit out of it.
Serve with a spoon.
 
And crusty bread.
 
*Soup is not quite finished so bowled pics yet to come. (I had to be careful with the spelling of "bowled" LOLOL)

Most days I bring my lunch to work but today I did not. I went to Hale n Hearty to grab a soup because they have a nice selection and I like their soups. Today when I was looking over the list, one caught my eye and I had to try it.

Cream of cauliflower. It was pretty good and made even better with some hot sauce mixed in. If you didn't post this I never would have tried it.
 
Hale & Hearty is good. Used to do Chelsea market one.
