I've had good luck using a mix of kosher salt, fresh ground black pepper, cumin, and your favorite chile powder, say a tablespoon of each, depending on how many chops you're cooking. You can always expand on that with other spices, I generally do. The 1:1:1:1 ratio of base ingredients seems to work well for me. The heat can be adjusted by blending powders. For instance, I never use a tablespoon of habanero powder, lol! I'll use a teaspoon of habanero with the rest of the tablespoon being paprika.
