Some rockin scallops
I made a blackened swordfish steak and asparagus for lunch today and was still in the mood for seafood for dinner. So I went back up to Whole Foods since I saw these good looking bay scallops(the little ones) on sale.
I mixed them in a bowl with salt, pepper, finely minced garlic, oregano, thyme, parsley, paprika, breadcrumbs, and a little grated Parmesan Reggiano. Heated the oven to 450 and put them in a casserole dish brushed with melted butter for about 15 minutes. Then I flipped them over, fave them a generous sprinkling of more breadcrumbs and Parmesan and broiled them for about 3 minutes. It was simple but came out unbelievably good.
