Naga Curry on Brown Rice and Lentils w/ Chipotle

Decided on something healthy this time.

I'd found some mystery meat in the freezer..unsure if it's turkey or pork loin..LOL! Ah well, it all cooks about the same.

I do remember I'd given it a spice rub and s&p before wrapping it up in cling wrap and foil...thats why the outside looks darker.

Two habs, onion, and the last mushroom cuz it needed to go...took big honkin knife outs and sliced the still semi-frozen meat up.

Ok, that all done...

I'd started a pot of brown rice and lentils soaking way earlier...stuff takes awhile.

It had a whole bunch of dry Pequins, garlic, onion, a bunch of curry powder, chile powder, and kosher salt & pepper.

It'd been only actually cooking for like 25 mins after like 30 mins of soaking.

Opened a tin of La Morena Chipotles in Adobo...added two to the rice just tering apart by hand...squishy! Plus, a tsp of the adobo. Now I added 1/2 of the habs, onions and nearly all of the mushrooms, gave it a dash of kosher salt, and let 'er continue on.

Ok, back to the meat...

Put together in a container: a splash of AC vinegar and EVOO, about a Tbls. each of Siriacha. yellow curry paste and 666 Naga sauce, a shot of ketchup, S&P, the rest of the veggies, and a tsp of Sambal Olek.

Mixed that all up, added the meat slices...mixed well, and stucck in the fridge to marinate.

Now, for sum beer and smokes while teh rice cooks....

Freakin' Yummers!

Now I took the meat/marinade out...it'd been like 20-30minutes already...put that in a hot pan, added a splash of half & half and a pat of butter, and let it rip for awhile....stirring/turning occasionally.

When it was done, put it over the rice and......

It's purdy damn hot..major sweaty/burning/etc. But everything came out well, the meat is tender and spicy...rice and lentils are smokey and hottt. If ya wonder why the meat stuff looks orange..well...it's a combo of the yellow hot curry pasts and the Naga 666 sauce. 'Tis rather warm...

It turned out that meat is likely a boneless pork loin after all. :D

Stuff is great....I've been meaning to make some kinda rice dish lately.
