1 package of saltine crackers
1 tbsp garlic powder
1 tbsp red pepper
1 tbsp Chile powder
1 tsp salt
1 gallon peanut oil to fry in
blend all ingredients together in a food grinder till the crackers turn to a flour and bath all fish in a light coating of mustard then roll in the seasoned cracker flour till it is coated well on both sides.
fry at 400 degrees for 4 minutes in preheated oil that is deep enough to float the fish at least 1-2 inches off the bottom.
make sure to reheat the oil to 400 each time so you wont have greasy fish. take the fillets out and let them drain on what I use is a cake cooling rack that I bought at the store , I use this instead of paper towels to let the oil drain away from the fish.
serve with a lot of ketchup and of course Tabasco mixed in
