Well its all browned, pureed and tossed together. Brought it up to temp on the stove top then put it in the oven really low. Today is rainy so lighting sucks. My camera is right on the edge of needing to use the flash and the flash screws up the color badly. After browning the meat in 2 tbs rice bran oil and 2 tbs of lard (meat was kinda lean) i added the onion and some salt to the pan. Then poured in the pepper paste concoction with all the spices. Sorta frying the sauce for a couple minutes Then added the meat back to the pan. Let that cook for about 30min in the intense flavors before thinning it down a bit. The steeping water from the peppers was not bitter so i used that.

 

Flash really messes up the color. Thats a little over 4lbs of stew meat

I got to make some sweet pickled onions for this. They would have been so much better. I like sour cream on most tacos but it really wasn't that great for these.

Made a lamb curry on easter. 1 reaper, 1 chocolate scotch bonnet, tomato sauce and heavy cream.

 

Gotta use up the rest of those reapers now that the new season is starting :-)

Made shrimp and grits last night for dinner. Leftovers this morning for breakfast were grit cakes topped with a poached egg, drizzled with the leftover grits gravy. It was probably as good, or better, than dinner!

Paella. 

 

Chorizo in the pan gettin' all toasty and releasing their oily goodness.

I used the oil to fry up some onions and garlic.

Then added some red and green sweet peppers from the garden.

Diced Chicken thighs seasoned with some of my rub and a little dry Thyme.

Long grain rice with chicken stock, one cup of Moscato white wine, and a tin of crushed tomatoes added. I kept adding water to the pan until the rice was almost cooked, then simmered off the liquid until there was barely any left.

All ingredients combined, and green beans added to slightly soften.

A couple Texas tamale company and one Tamale Factory pork tamale....The Texas ones are not really that great but they are cheap. The other one is really good. Some Fresh Thyme hatch chile salsa and Bold Badger Smokehouse from his recent promotional giveaway....freaking great on this too.

If i had to name one major weakness for Asian food it would be...........DUMPLINGS!! Pot stickers are probably my favorite.....NO...they ARE my favorite. :D

It was got dang guud!

 

But its still mo' betta'.

 

In Hawaii. 

 

There's north shore shrimp trucks.

 

That have their own shrimp farms!

 

I can't 'splain it.

 

You have to experience it.

 

Paradise that is.

 

The food in Hawaii is just that.

I appreciate the kudos.

 

But I faked the ice cream scoop.

 

With a little tupperware container.

 

It was goodern' hell.

 

However.

 

Not even close to as good.

 

As a north shore shrimp truck.

 

I wouldn't say Giovanni's is the best.

 

But this flick gives a good lowdown.

 

On the style.

 

(Tabasco? Dude. Reach into your pants and grab your cajones and man TF up!)
