Yall already know about REAL chili. Im talkin about chili to make when there will be allot of non chili heads and or children to feed. It can't be to spicy for these folks. Even tha young grandzillas, carpet monkies, and grass apes will eat this chili if you keep it mild. You can always spice up your bowl later, as hot as you want it.
2lbs. coarse ground chuck
1 lb. pork breakfast sausage
1 pack Corroll Shelby's chili mix, minus the red pepper pack
1 pack taco seasoning mix
1 pack ranch dip mix ( yep, don't be skeerd! )
1 can Ro*Tell, regular or their milder, tomatoes
1 can diced tomatoes, 15 0z. or so
1 8 oz. can tomato sauce
1 medium chopped onion
1 medium bell pepper
4 cloves fresh garlic, finely chopped
1 tbl. spoon cumin
1 tsp. mexican origino
1 tbl. spoon black pepper
4 yellow corn tortillas
Brown the chuck in a skillet with the bell pepper, onion, and the salt pack from the mix. Add to your 12 qt. or larger chili pot. Brown the sausage in the skillet, drain the grease, and add the sausage to the pot. Now add everything else but the cumin, origino, masa pack from the mix, diced tomatoes, and tortillas. Add water or beer to about 1" above whats in the pot. Simmer covered for one hour. Now add more water, the masa mixed with some water first), the tortillas (they will desolve), diced tomatoes, and simmer another hour. Add the cumin and origino. Simmer uncovered for 30 minutes Taste it! You might need to add more liquid or let it condense more till it tasts right. Hey, it's your family chili! Notice I did not say that is is your chili. Your chili would not have allot of this stuff, but would have all kinds of hot stuff already added.
You could layer the onions and bell peppers, but they will disolve if you add them early. Some kids won't eat the chili if they can see that stuff in their bowl.
You can use your favorite chili mix, or your own blend of chili spices, as long as it's mild.
Now for the fun part. Serve with saltines, fritoes, corn bread, or whatever else you want. Side with a bowl of chopped nacho style pickled jalapenos (and the juice), a bowl of whole pickled jalapenos, maybe even some fresh jalapenos, cayenne, or hotter peppers, for those who want things really hot. Oh, don't forget bottles of your favorite hot sauces! Also, grated cheese, chopped onions, and whatever else you can think of. Canned corn, ranch style and pinto beans, and ketchup, are things some of my familly insist on. It would hurt my soal to see this stuff added to MY chili but hey, this is family chili.
I sometimes mix and match carrots, celery, corn, peanut butter, and or beans to the pot. But then I call it chili stew. For family chili stew you can add whatever else you want... as long as it's not hot.
Now enjoy the family, friends, and the chili, or??? whatever else you choose to call it.
