food Yellow Brain Strain Balti Chicken

Dinner tonight made with fresh Yellow Brain Strain pod from Dale @ BakersPeppers.

Balti Chicken

Ingredients:
1 Fresh Yellow Brain Strain Pod
2 Chicken breasts
3 Cups of toamato sauce
1 shot glass of olive oil
1 Cup Basmati Rice
1/2 tsp Lemon Juice
3 Tbsp Balti Mix
3 Tbsp yogurt ( I don't do dairy so I skip this)

Balti Spice Mix- (these qty's will make enough spice mix for 2-3 meals)
2 tbsp Onion powder
2 tbsp Garlic powder
1 tsp Cinnamon
1 tsp Black Pepper
1 tsp Garam Marsala
1 tsp Ginger
1 tsp Cumin
1 tsp Chili powder
1 tsp Salt

Directions:
Cook rice ( I use rice cooker)
cube chicken to desired size ( larger cubes cook longer over lower heat)
put tomato sauce in sauce pan and add Balti spice mix and stir in some minsed brains
Heat up sauce/spice mixture/brains to a rolling simmer
after chicken is cubed add to heated sauce and stir often
Stir until chicken is thoroughly cooked
Note: I prefer larger cubes of chicken and I tend to cook it slow and low (40-50minutes)
Cook time approx 30 min +/-
Spoon out on plate and enjoy!

Very nice but it needs more color to really make the plate pic pop. Some kind of greenery and maybe garnished with some of the chile's.
 
Looks great. I dig the plate you used, better than my old standard corelle.

A little bit of cilantro on top would be killer, too.
 
Wow... mouth watering. I think we should all get together for a cookoff! There are some excellent cooks on this forum. I love to cook, but you guys very often put me to shame.
