Birds Eye Mexican pork roast

I want to share a dish I'm making today. A Mexican type birds eye pepper garlic pork roast.

You need:
8 lb pork butt
3 Lg onions
2 cups of fresh garlic
1 head of cilantro
1 Lg can of roasted tomatoes
3 table spoons of sea salt
1 table spoon of cracked black pepper
2 table spoons of birds eye pepper powder
Juice of 4 limes and tbls of zest
2 cups of white vinegar
4 cups of water
4 charleston cayenne pods
Large deep cooking dish that will hold everything
Olive oil to coat dish
First rub all your dry ingredients on meat and seal in Lg ziplock bag
Leave in frig for 1 hour
Next cut up onions and put in bottom of deep pan
Put garlic on top of onions
Roast on onions
Mix your tomatoes and cilantro together put around roast
Pour the vinegar and water into dish
Top off the roast with a little garlic salt and birds eye pepper powder
Cover with foil
Put oven on 275f
Cook for 10 hrs
Take roast out of pan
Pour juice tomatoes onions into a deep pan
Taste each for salt and sweetness
Carmelize roast with light brown sugar
On 400 for 10 minutes
Reduce sauce drippings on top of burner
Serve eat little burn great taste
Note: you can make it hotter but this dish
Is not over powering with heat.

Sounds like this is a job for the slow cooker! I love the fact I can sear and cook everything in it then move it off to allow it to do some magic.

Chris I use a large deep crock pot dish. I take it out put it on a large metal dish for safety. It will alway overflow and make a mess. Andrew
 
1. Take pictures with iPhone
2. When posting here on THP, hit the "More Reply Options" next to the "Post" button at the bottom of the text field.
3. Hit "Choose File"... a pop up window opens..
4. Hit "Take Photo or Video" OR " Choose Existing"
5. click the photo you want
6. Then below the "Choose File" button at the bottom of the THP text field, hit "Attach This File"
7. Then hit "Add to post"
8. "Add Reply"

Done. Hopefully that helps.

Try it a few times in the "Twispted Reality" Extreme thread if you want... nobody cares what gets posted in there. lol kindof the point. lol
 
Is this your take on puerco pibil w/o orange juice or banana leaves?

Or is this a specific dish?
 
Thp it a dish me and girl came up with. It's kind of a carolina meets mexico dish. The vinegar gives it a Wang. Tomatoes, onion, cilantro, garlic give it great flavor. The lime let's u take some vinegar out giving more flavor. I taste all these before the heat hits. Still could not post pics. I phone blues(going to play my guitar) Andrew
 
The roast turned out great. Even put a little brown sugar in the sauce this time. Tasted great with balance. Next time I'm going to add a little good red wine to sauce to
Make it fruity also. This sauce could be used with any meat or mushroom dish over a nutty rice. Andrew 96strat
