Rocoto Jelly

Found some Orange Rocotos at the grocery store and decided to try to make some jelly out of them.  I usually stick to my tried and true smoked raspberry recipe.  Anyway, I decided to venture of to this one.  It's a bit sweet - next time I would probably skip the ancient sweets and just go with all Rocotos.
 
Ingredients: (makes (6) 1/2 pint jars)
500 grams deseeded orange Rocotos (couldn't imagine having black seeds in the jelly)
220 grams deseeded orange ancient sweet peppers (substitute orange bells if necessary)
1300 grams sugar
3/4 cup cider vinegar
2 TBSP lemon juice
1 package liquid pectin
 
Directions:
Process Rocotos, ancient sweets, vinegar, and lemon juice in food processor until smooth.
Sterilize jars.
Bring Rocoto mixture to boil . . .  simmer approximately 20 minutes.
Add sugar and liquid pectin. . . bring to rolling boil and cook for 1 minute.
Skim any foam.
Fill sterilized jars, leaving 1/4 inch head room.
Seal jars.
Process jars in boiling water for 5 minutes.

Some heat but not too hot.  Next time I think that I will leave out the sweet peppers and go with 100% rocotos.  Rocotos may be my favorite chile - nice combination of flavor and heat, but not overpowering.  I will most likely make another batch next week.  This batch is definitely one that non-chileheads could enjoy.  If you like rocotos, you will like this.  Thanks.
