Hi, new with a question :)

Hey there, I'm from Washington DC, 32 years old and have been enjoying hot sauces most of my life.

Some of my favorites are:

Texas Pete
Marie Sharp's Habanero
Marie Sharp's Beware
Blair's Death Sauces
Dave's Insanity and other Dave's sauces
a new one I just tried today and I'm sweating while typing this,
"Endorphin Rush" which is great, a lot like Insanity.

I don't know why I never thought to see if there was a hot sauce forum out there, I go to a lot of other forums already. Okay enough of my ramblings lol. Here's the question:

Any complete, accurate list of every sauce with SU counts out there?

I've been on a couple of ordering sites that list some of the counts, but I've yet to find a really complete list. If not, I'd love to take on the task of creating one and stickying it here. Anyway, thanks for reading and I hope to enjoy talking about the hot stuff.

Welcome from Ohio and I do not know of a list of all the Hot Sauces but you will find a good amount here on THP.

I, like Dan, do not know of a single place to get what you are looking for....just bits and pieces you find in different articles on the net...

Well Coyote, first off welcome to the board. I am from Northern VA, so you never know our paths might cross one day. I never heard of some mega-list out there. It costs companies to get the Scoville Unit analysis done, and there are so many hot sauces in the market, you would go broke trying to keep up with all the new ones put out each and every year. It would be cool to check such a list out and wish you all the luck in the world in attempting this monumental feat.

There is a Hot Sauce company called Scoville Food Institute that has a cute little gimmick including the Periodic Table of Scoville Units (TM).

IMO, Scoville is just like temperatures...for some, 80F is hot, others find it just fine. Then ya gotta take into account humidity, pressure, ethnic backgrounds, etc, etc.

In short, Scoville doesn't mean much. Eat what you like.

Most commercially made food uses extract of capiscum to create heat..it's cost-efficient. I prefer looking at actuall ingredients..what chiles does it contain, where on the list are they, how much is vinegar or water, etc.

Once ya go down the extract road, you'll have to kinda rebuild your palette for the wonderful flavor the more natural sauces have. Extract is just a chemical..it doesn't occur naturally by it's self and thus has little flavor..just "heat".

If you are just looking for "the hottest" AND flavor, that's easy.. just eat a bih jololika, naga morich, or 7-pot pod raw...;)

Or, try some of CaJohn's or Defcon's stuff...they make pains to use high-quality extracts without some of the harsher chemicals being involved.

Well, I'm not looking for a particular hot sauce, I guess I'm kind of a freak about organizing stuff like that just for reference purposes. For example I have a rough idea in my head about the scoville counts of a lot of sauces, and I don't even know if it's completely accurate. Something along the lines of:

I guess the hottest I've had is Dave's at 51,000. I'd like to try something up to the 200,000 range, and then eventually try a very diluted 800,000-1,000,000 sauce.

I think I know why people don't care for Endorphin Rush, because they try to eat it plain. Most sauces that are that hot I definitely cut with Texas Pete, or Blair's Death or my personal fave, Marie Sharp's Hab. Dave's is similar in that respect, but I actually like the taste of Dave's plain. I don't mind Endorphin plain, but mixed really brings out the flavor a lot.

Nice list -- Alot of extract sauces just grind my stomach something awful finer extracts such as Defcon 0 ;) arent as harsh as they are plus I just like hot with flavor nowadays for the remaining tastebuds that I have.
