Black Crappie fried in butter for four minutes and thirty seconds a side. This was cooked perfectly.
 
Not sweet like the Catfish I recently reviewed,, but nonetheless a delicious fish with a deep complex flavor.  I ate it with a Pumpkinseed Sunfish cooked next to it and the "Sunny" was much more plain tasting.

The only fish I leave skin on are salmon and trout (grilled, baked, or smoked).

 

I've eaten a lot of fried crappie with skin on (scaled of course). It's good, but I prefer it without the skin.

 

Unless cooking whole fish... like red snapper on the grill stuffed with lemons and herbs...

Salmon skin is great fried....ever had a salmon skin roll at a sushi place? I leave the skin on pretty much all the smaller pan fish. Catfish always get skinned and i normally skin any large sucker/carp type of fish. Once on a whim i made some salmon tempura with the skin on. I thought it was excellent.

Also some lobster and melted smoked gouda. Then some hogfish in a white wine leek butter caper sauce. Also some ceviche, really good with heart of palm.

Delicious and cooked to the right consistency. A drop watery though. I think I may have sealed the fish without drying it enough.
