Question on Beefsteak Type Varieties

Half of my tomatoes are usually of the beefsteak type. For example, hybrids like Beef Master and Big Beef and heirlooms like Cherokee Purple, Watermelon Beefsteak and Brandywine.
 
It seems pretty consistent across all of them that they are prone to cat facing and uneven ripening(less so with the hybrids). I understand you are going to get uneven ripening with these heirlooms from time to time, but last year on my Watermelon Beefsteaks and Cherokee Purples the cat facing got worse as the year went along, forcing me to ditch a lot of the fruit when the weather got colder. Oddly I have seem pics of these fruits, and they are rounder than my extremely ugly tomatoes. For the record I'm not looking for a perfect looking tomato, but when cat facing and uneven ripening as severe as they were in my case I lose a good amount of fruit.
 
I've seen all these varieties that have less ugly fruit. Could it be it soil conditions, water or weather?
 
Any recommendations on a beefsteak type that a bit more round with less of a core? I haven't grown Mortgage Lifter yet what's that like?
 
 
 
I grew Mortgage Lifter last year and the fruits were beautiful and flavor was passable. The flavor of Brandywine is better, but Brandywine has the problems you mentioned. Sarah Blacks (Schwartze Sarah) are "fairly well" shaped and have deep, rich flavor associated with heirloom black tomatoes. Favorite tomato of all was Malachite Box (Malakhitovaya Shkatulka). Green when ripe with amazing tangy-tomatoey flavor. Problem is, some are shaped perfectly and some on the same vine are gnarly. Worth it for the flavor imho. Seems to be a trade-off with heirlooms, flavor or shape.
