Fajitas!

My family requested I fajitas tonight, so I figured I would share my recipe for fajitas.
 
Marinade:
 
1/3 c. Orange juice
4 Tbsp Lime juice
4 Tbsp Olive oil
1 Tsp Cumin
1 Tsp Coarse kosher salt
3 Chipotle peppers in Adobo sauce
2 Tbsp Cilantro, chopped
Hot pepper power of your choice to your heat level (I used Aji Limon powder since my family isn't into really hot stuff)
 
Other ingredients:
 
2 pounds skirt steak, sliced thinly (or whatever meat you want!)
3 red bell peppers, julienned
1-2 onions, julienned
Tortillas
 
Salsa, sour cream, hot sauce, guacamole, pico de gallo, etc of your choice.
 
Mix all the marinade ingredients together and blend in a blender until nice and smooth. Put steak in a ziplock bag and pour marinade in and coat meat well. Refridgerate for 4-8 hours. Drain off marinade when ready to use.
 
Grill or fry your peppers, onion and meat until your desired tenderness/doneness is acheived.
 
Serve in warm tortillas with condiment of your liking.
 
You will have to give me a moment. These things take time to marinate. But since yall are being so impatient, here is a photo of it marinating in a bag... ;)

TNR I like ever 'thang that you done did so far with that skirt steak.
 
Except slicing it up and stripping it out beforehand.
 
Texans are snobby about such 'thangs.

I'd give it a big squeezin' and pleazin' of lime and Chairman Mao the hell out of that.

     I'd throw a big handful of cilantro on that (and maybe a dab of Reaper Swarm  :drooling: )! Then I'd squeeze Mao Tse Tung, or whatever TB said...
 
 
 
 
edit: Oh, and by the way. If you ever make those again and don't char the tortugas a bit in a CI skillet, Scovie will find you and beat you up.

Even Scovalingus wouldna' object to them fajitas.
 
He might say sumfin' 'bout charred tortilla's but othern' that I reckon he'd get down with that.
 
Holy crap, they are even better after they've sat in the fridge for a few hours. I smothered that bad boy with sour cream and sriracha. Sriracha REALLY complimented them, in my opinion.

     Tortuga is Idiot for tortilla. Try toasting your tortugas in a hot skillet before you fill them next time. It adds a little extra something to an already awesome looking fajita.

Oops I lied.  I thought I had all them ingredients but I don't.  Next time tho!
