fermenting Finished ferment

Since yesterday was my birthday I pulled out a ferment that had been sitting on a shelf in a dark room since last November so I could have some new hot sauce for my birthday...  man oh man this stuff turned out very good .. nice and hot and wonderful flavor .. was my first ferment and can not wait to make sauce out of the other 2 jars I have .
 
Contents included:  I used my last harvest of the year for this ferment.  Using green as well as ripe pods including:  Ghost, Triniadad Scorpion, Spaceship (Jamaican Mushroom cross), Purple Peruvian, Cayenne, Chocolate Habanero, Caribbean Red Habanero, Anaheim and Jalapeno peppers.  Added salt, carrots, onions, cumin, corriander and Riesling wine.  The wine created a very good flavor.
